Production Details Fermentation initiated in stainless steel fermenters with pump overs until dry. Further maceration followed before drawing off, light pressing and racking to barrel. Spent 20 months in French oak barrels (90% 1st fill, 10% 2nd fill). Harvest statistics at picking: 25-25.5°B, total acid 7-7.5 g/l, pH 3.4. Vintage preceded by cold wet winter and warm dry summer with good even budding. Ripening season had warm days with moderately cool evenings.
