Production Details Overgaauw describes this as the continuation of South Africa's first bottled single-varietal Merlot. Fruit came from Stellenboschkloof vineyards 15 km from False Bay, trained on a 4-wire hedge system and pruned to a cordon system with 2-bud spurs. The wine underwent 3 days of cold soak, then 9-12 days of alcoholic fermentation at 25°C with 2-3 aerated pump-overs per day, before 10 days of skin maceration and 18 months in 225L French oak with 40% new oak. Decant 30 minutes before serving.
