Production Details Rooted in Polkadraai Hills, Stellenbosch. Grapes from the two soil types were fermented separately, with the decomposed granite contributing lime and mineral character and the sandstone contributing tropical fruit and structure. The juice was cold settled for 2 to 3 days, then cold fermented at 14 to 16C in stainless steel tanks and aged on the lees for 6 months before bottling. No wood ageing.
