Production Details Blend: Chenin 39% (Paardeberg & Bottelary Hills old vines on granite soils), Semillon 15% (Banghoek), Viognier 15% (Helderberg), Verdelho 14% (Voor-Paardeberg), Roussanne 8% (Voor-Paardeberg), Grenache Blanc 7% (Piekenierskloof), Chardonnay 2% (Bottelary Hills). Vineyards are mostly in Stellenbosch with some Swartland fruit. All components were fermented wild and matured in French oak in a combination of barrique and 400 litre barrels, with 25% new oak. The wine underwent full malolactic fermentation, was blended after 9 months on the fermentation lees without stirring, and received a coarse filtration during bottling. The producer notes 2016 as a tough drought vintage with yields more than 50% smaller.
