Production Details The official Kleine Zalze product page states that the fruit for this wine came from 2 specific vineyard blocks on the farm and 2 small parcels from the slopes of the Helderberg and Helderberg basin. It notes that the effect of the preceding 3-year drought was still evident in the 2019 harvest despite higher seasonal rainfall, resulting in smaller crops in the 2018/2019 growing season. It further states that irregular temperatures from winter to flowering caused some uneven ripening, managed by removing green or uneven bunches after veraison, and that cool conditions toward the end of ripening produced smaller berries and intensely flavoured, elegant wines. After destemming only, the grapes were fermented in a combination of stainless-steel tanks and traditional open-top fermenters, using punch-downs and pump-overs at different stages, then gently pressed and matured for 18 months in 300L French oak barrels, 80% new and the remaining 20% a blend of 2nd and 3rd fill, before final blending.
