Production Details Produced from grapes from seven different Swartland vineyards, focused on schist and granite soils in the mountains of the Swartland. 30 to 50% whole bunches were used, with the remaining fruit sorted, destemmed and not crushed. A cold soak with daily punch-downs preceded spontaneous fermentation and approximately four weeks of skin contact, after which the wine was pressed and drained to old French oak barrels for malolactic fermentation. Yield was 4.0 to 5.0 t/ha.
