Production Details A wine from the very small and intense 2016 vintage using grapes from seven vineyards. 30 to 50% whole bunches were layered in the bottom of an open tank, with the balance sorted, destemmed and not crushed. Spontaneous fermentation occurred in tank, followed by approximately four weeks of skin contact, then pressing into old French oak for malolactic fermentation. Yield was 3.0 to 5.0 t/ha.
