Production Details Grapes chilled overnight. Hand-sorted and gently pressed whole-bunch. Juice settled overnight at 8 degrees Celsius. Racked to old French oak barrels and fermented (100% spontaneous fermentation). Left on the lees for 9 months with lees stirring before bottling. Additional 24 months ageing in bottle before release.
