Production Details The official producer page for the 2023 release says the wine is made from three grape varieties from the Paardeberg, Swartland. It is fermented on skins to add tannin freshness and extra fruit flavours. Fermentation is done with native yeast from the vineyard and cellar, and the wine is bottled under crowncap during the last part of fermentation so it continues fermenting in bottle as a natural sparkling wine.
