Production Details A 48-hour cold maceration period was given prior to fermentation to extract colour and fruit. Fermentation used 3x/day pump-overs, followed by gentle pressing and dry fermentation. MLF occurred in barrels, then the wine was matured for 20 months in French oak: 20% 2nd fill, 40% 3rd fill, and 40% 4th fill. Night-harvested and hand-picked grapes. Ageing potential: 8 years after vintage.
