Production Details Night-harvested and hand-picked grapes. A 48-hour cold maceration period was used before fermentation, with skins pumped over 3 times per day, gentle pressing, dry fermentation, and MLF in barrels. Aged for 20 months in French oak: 20% 2nd fill, 40% 3rd fill, 40% 4th fill.
