Production Details Sourced from two vineyards, hand-picked and pre-cooled grapes were destemmed and hand-sorted; balance of the berries kept whole and added to fermentation tanks. Initial three-day cold soak, spontaneous start, then inoculated yeast. Post-fermentation maceration on skins for 26 days. Pressed into 100% second-fill 300 litre French oak barrels (free-run and press fractions separate). Malolactic fermentation in barrels, left on lees and returned to barrel after 10 months. Total 20 months in barrel before racking for bottling with coarse filtration.
