Production Details The hand-picked grapes were cooled overnight, then hand-sorted and destemmed, after which the pressed juice was left to settle. Fermentation started in stainless steel and finished in oak barrels. A 15% portion of the settled juice is fermented and matured in new French oak for 8 months, which gives body and complexity to the resultant wine. To retain freshness, some of the barrels go through spontaneous malolactic fermentation, which softened the overall acidity and therefore the mouthfeel.
