Production Details High on the slopes of the Simonsberg perch a few vineyards of pinot noir. Babylonstoren says it uses the sur echalas method (known locally as stok-by-paaltjie). Nature can be harsh up there, so berries are small and the harvest modest, which the producer says makes for intense, honest flavours. Babylonstoren also states that only a very limited number of bottles were made available to Wine Club members.
