Production Details Grapes were handpicked and cold-soaked for 24 hours. Fermentation was initiated with selected yeast strains and kept under 26C. Malolactic fermentation was completed in a stainless steel tank, and 80% of the wine matured for 12 months in inert 300-litre French oak barrels.
