Production Details Technical analysis lists FSO2 22 ppm and TSO2 71 ppm. Fruit comes from a single block of bushvines on Welbeloond in Durbanville, farmed by Andrew Mellish using organic farming practices with recent organic certification. Strong ocean influence and constant winds keep the vines cool, with only minimal supplementary irrigation at critical stages. Grapes were hand-sorted at bunch level; 85% was destemmed into open-top fermenters and 15% retained as whole bunch. Fermenting grapes were foot-stomped and gently punched down three times daily for 10 days before pressing to tank, then racked into 25% new and the balance seasoned French oak barrels for malolactic fermentation and maturation. A gentle filtration preceded bottling.
