Production Details The wines in this blend were picked, sorted, fermented and matured separately. After 30 months in new 500-litre French oak barrels, the wines were blended and returned to barrel for a further six months. The wine was filtered and finally bottled in September 2008. The Western Cape experienced warmer and drier conditions than the long-term average for the second successive year. Sufficient winter cold was followed by a warm spring, resulting in faster, even budding. Harvesting started two weeks earlier than usual, and the grapes were very healthy with good colour and complexity.
Food Pairing red meat, hard cheese
