Production Details The grapes whole-bunch fermented in a 5 ton open fermenter with manual punch downs. A few bunches were crushed by booted foot-stomping. Fermentation was started with wild yeast before some commercial yeast was added to help things along. The wine was matured in barrel and tank to retain both fruit and spice.
