Production Details Fruit from two wind-battered coastal vineyards was cooled overnight before spontaneous fermentation in open-top fermenters and conical foudre. Around 50% whole bunches spent 2 weeks on the skins before basket pressing, then the wine aged for 10-11 months in foudre and old 500L French oak barrels.
