Production Details Vineyard: 30% Sauvignon Blanc, 26% Semillon, 26% Pinot Gris, 18% Sauvignon Gris. Yield: 6 t/ha. Origin: Robertson, South Africa. Oenology: harvested at night using dry ice in February 2025 with dry ice protection; juice settled without enzymes at -3°C for 3 weeks; 21 days alcoholic fermentation; 100 days on primary lees; all racking done under CO2; stabilized at -4°C for 1-2 weeks. 80 g/hl bentonite fining and 2.5-micron filtration on estate prior to bottling. Climate: moderate summer with low night temperatures, cold winter. Wind: south easterly (summer).
