Production Details Spontaneous fermentation lasted 28 days on the grape skins with daily punch downs and pump-overs. The wine was gently pressed and matured for 8 months in barrel of which 20% was new Russian oak. Another 3 months in a neutral vessel allowed the wine to homogenise prior to bottling.
