Production Details Fermented in a custom-made 4,500 litre French oak fermenter after destemming and crushing. Manual punch-downs 4-5 times a day with regular pump-overs. Low yield of approximately 5 tons/ha. Hand-harvested in the early morning. Filtered only once before bottling. Accolades noted on the producer sheet: 90 points Tim Atkin South Africa Report 2020 and Quest for the Best Wellington.
