Production Details All varieties vinified and barrel-matured separately with some varieties undergoing whole-bunch fermentation. Cold soak 3-4 days, portion of juice drawn off to maximize skin contact and colour extraction. Fermented in barrels followed by malolactic fermentation. Matured in French and American oak barrels for 12 months, then blended before bottling.
