Production Details Organic certified viticulture. Hand harvested. First selection before gentle destemming of 100% grapes. Second berry-by-berry selection on sorting table. Partial fermentation in stainless steel, partial in concrete eggs. After two weeks gentle maceration, pressed and only free-run juice retained. Malolactic fermentation completed, wine transferred to concrete eggs for aging.
