Production Details Blend of Touriga Nacional, Tinta Barroca, and Souzao. Fruit from the Axe Hill vineyard is normally harvested during February at around 24+ Balling. Different blocks may be harvested and vinified separately before blending, or co-fermented depending on ripeness. Hand harvest and sorting starts early in the morning so grapes arrive cool at the cellar. Grapes are crushed into open concrete lagares (kuipe), cold soaked for a day, and tread by foot for colour and tannin extraction, with punch-downs and pump-overs during fermentation. Fermentation takes place over 4 days before fortification with unaged brandy spirits. The wine then settles, is racked to barrel and later to tank for ageing, must be bottled within two years of harvest, and then undergoes further long-term bottle ageing in the cellar before release.
