Production Details Region: Darling; Ward: Darling. Single old-vine, unirrigated bush vines in the Darling Mountain on an east-facing slope. Grapes were picked at optimal ripeness, cooled overnight to 4C, hand sorted the next morning, partially destemmed, and fermented spontaneously in open-top fermenters using a combination of destemmed grapes and whole bunches. The wine stayed on skins as long as possible, then aged in older oak for 8 months before blending and bottling.
