Production Details Yield 5 t/ha. No irrigation. Trellised on a 5-wire extended moveable Perold system. Grapes were selected in the vineyard and on the sorting table before destemming. The berries remained intact for fermentation in stainless steel tanks after a five-day cold soak before yeast inoculation. Gentle pump-overs were performed three times daily, and the juice was separated from the skins just before fermentation completed.
