Production Details 100% Elgin Valley fruit from Table Mountain Sandstone soils. French Dijon clones 115 and 777. Bunches were de-stemmed, 60% crushed, and hand sorted, then cold soaked for three days in stainless steel tanks before fermentation. Fermentation was partly spontaneous and partly inoculated depending on site, soil, and style elements, with daily pigeage. After basket pressing, malolactic fermentation was completed in 225 and 300 litre oak casks, then the wine matured for 9 to 12 months in third- and fourth-fill Burgundy coopered casks before light filtration and bottling. 7,500 x 750ml produced. Release date: March 2024.
