Production Details Fermented in French oak barrels, concrete egg and foudre. A combination of natural fermentation and inoculation with commercial French yeast was used. The wine was kept in barrel without racking. Lees were stirred once per month prior to bottling. Elgin Valley is a cool-climate site with vineyards at 200-600m altitude, sheltered by Table Mountain sandstone mountains.
