Production Details Grapes are handpicked from a single block of Chardonnay on the estate and whole bunch pressed. The juice settles in stainless tanks for one day. Eighty percent of the juice is fermented and matured in French oak for 14 months (45% new oak, 35% second fill), whilst twenty percent is fermented and matured in concrete eggs for 14 months. The wine remains on the lees for 90 days with weekly lees stirring.
