Production Details Straw green colour with golden hues. Fermented in 38% new 300L oak barriques and 1,500L foudre, using medium and light toast tight-grain cooperage, for 8 months. After 8 months the different components were blended and returned to foudre and barrel for another 3 months for integration.
Tasting Notes
Nose: stone fruit, citrus lime, orange peel, almonds, marzipan
Palate: creamy, elegant, toasty oak, mineral finish
Food Pairing bergamot Belgian white chocolate, panko crusted goat's cheese with tahini dressing
