Production Details Origin Paarl. Yield 6 tons per hectare. Vineyards were planted in 2004 on ancient granitic soils. Cooler nighttime temperatures support slow ripening. Soils are described as friable yellow granite over a clay fraction, with deep root penetration and moderate to high vine stress from warm days and windy conditions, producing small concentrated berries. Grapes were harvested early in the morning while cool, then sorted at bunch and berry level before fermentation. Regular pump-overs were used during fermentation for extraction of tannin and colour. After gentle pressing, the wine settled in tank and was racked to barrel for maturation and malolactic fermentation. After MLF, the wine was sulphured and topped regularly. A tailored mix of first-fill, second-fill, and older barrels was used. Barrel maturation lasted 24 months before blending and bottling. Free SO2 0 mg/l. VA 0.77 g/l.
