Production Details Dryland vineyards with no irrigation. Clonal blend of SH1 and SH9 harvested from micro pockets of shale and granite soils. Grapes were harvested in crates, sorted and de-stemmed. Cool fermented with 20% whole bunch in open-top fermentation vessels, with the cap punched down every 4-6 hours. Matured in 300L and 400L French oak barrels, 20% new, for 11 months.
Tasting Notes
Nose: white pepper, mixed spices, game meat, charcuterie, fynbos shrub, raspberry, blueberry, hedgerow fruits
Palate: fine, granular tannins, bold black and red fruit, integrated oak, balanced acidity
Sight: dense, ruby-red
