Production Details Top parcels are farmed without irrigation. Vines grow on mid slopes at 230m to 350m above sea level, on weathered granite and alluvial soils. Grapes are hand-harvested into 18kg boxes between mid-February and mid-March at 24 to 25 degrees Brix. Individual batches are fermented in small stainless-steel tanks at 24 to 28C for 9 to 11 days with pump-overs morning and evening, then left on skins for a further 3 to 7 days. Malolactic fermentation is completed in barrel. The wine matures for 18 months in 300-litre French oak barrels, 40% new, is racked four times, then spends a further 3 months in tank after blending.
