Production Details The Sauvignon Blanc vines were planted in 1997 on a southeast facing slope in lime rich red Karoo soil. The Sauvignon Blanc grapes were picked at two stages of ripeness. The first part was picked around 17 to 18 °B, and the second part at 21 to 23 °B. The juice was cold-settled, fermented with specially cultivated wine yeasts at 12°C, and left on fine lees for another three months.
