Production Details Production: 2,500 cases. Field Atlas is made from selected estate vineyards on Simonsberg-Paarl. Noble Hill says 2021 had a mild, wet spring followed by a long, moderate summer, giving good phenolic ripeness and one of the latest pickings in recent memory. Fruit was hand-sorted, lightly crushed, cold-soaked, and fermented with a significant proportion of whole clusters for partial carbonic maceration. The wine was oxygenated daily via remontage and delestage, then racked into large-format concrete tanks and 225L French oak barrels at the end of primary fermentation and matured for 18 months before bottling. Noble Hill notes some sediment may occur in bottle.
