Production Details Field Atlas is made from selected estate vineyards on Simonsberg. Noble Hill says the cool, dry 2022 spring allowed good flowering and fruit set, resulting in ripe, compact bunches and even ripening. Fruit was hand-sorted, lightly crushed, cold-soaked, and fermented with a significant proportion of whole clusters for partial carbonic maceration. The wine was oxygenated daily via remontage and delestage, then racked into large-format concrete tanks and 225L French oak barrels at the end of primary fermentation and matured for 18 months before bottling. Noble Hill notes some sediment may occur in bottle.
