Sites The grapes are hand-selected from prized vineyard blocks in the Helderberg ward of Stellenbosch, with mountain slopes, altitude, coastal proximity, low vigour, and well-drained soils contributing to a concentrated expression of Cabernet Sauvignon.
Fermentation Vessels Stainless Steel
Production Details Leaf thinning, green harvesting, and bunch selection are used in the vineyard to ensure even ripeness. At the cellar the fruit is rigorously sorted, fermented in stainless steel tanks for about two weeks with regular pump-overs, then lightly filtered and matured under a restrained oak regime in a combination of 30% new oak and older barrels for 15-16 months before further bottle maturation.
