Production Details Three site-specific blocks were planted for rose production. Grenache Noir and Mourvedre blocks of 0.73 ha each were planted in 2012, and the 0.26 ha Cinsaut block was planted in 2016. Grenache and Cinsaut are vine-by-post, while Mourvedre is planted as bush vines without trellising. Grapes were hand-picked in the second week of February between 21.5 and 22 Balling, in the morning to retain fresh flavours. A portion was destemmed, crushed, and left in the press for an hour longer to extract more colour and complexity, while the larger portion underwent a delicate whole bunch press cycle. After one night of settling, the juice was drawn from the primary lees, clarified right after fermentation, and bottled very early to preserve vibrant flavours, acidity, and mouthfeel.
