Production Details Rare Stellenbosch interpretation of Sangiovese from a two-hectare single vineyard rooted in decomposed granite on the lower slopes of the Helderberg Mountain. The vineyard is farmed with organic and biodynamic practices, without pesticides, herbicides, or chemical sprays, using farm-produced compost, teas, and biodynamic preparations. Fruit is hand-picked in small lug boxes and crop-reduced for quality. In the cellar the grapes are sorted twice, extraction is managed with pigeage or hand punch-downs, fermentation is natural without commercial yeast, and the wine is bottled without fining or filtration after 15 to 16 months in French oak barrels. The wine is recommended for decanting before service and is intended to develop over the next eight years.
