Production Details 375ml bottling. The wine is named for the Fleurfontein spring above the source Sauvignon Blanc vineyard. Keermont pinches the stems of selected bunches at optimal ripeness so the grapes dry naturally on the vine for a few more weeks, concentrating sugar and acidity before a hard pressing. The syrupy juice is slowly fermented by indigenous yeast in Hungarian and French oak barrels, then matured in those barrels for about 15 months. All grapes were grown on Keermont Vineyards and the processing, maturation, and bottling were carried out by hand in the cellar.
