Production Details Official tasting notes describe Sparklehorse Chenin Blanc Cap Classique 2019 as traditional-method sparkling wine from a carefully selected cool vineyard site in Stellenbosch Helderberg. The mature irrigated vineyard was planted in 1975, retrallised on a Double Perold system after old cords were removed in 2006 due to Eutypa, and managed with controlled yields for a specific Cap Classique purpose. Fruit was hand-picked selectively at 18-19B, sorted before crushing, and the wine aged for 8 months on lees plus 28 months sur lattes to build creaminess and delicate mousse while preserving refreshing acidity.
