Production Details 100% Cabernet Sauvignon. Fermented with natural yeasts in a classic, minimal interventionist style focused on purity of fruit and fine, silky tannins. Pump-overs were done two to three times per day during fermentation, followed by extended post-fermentation maceration with the wine left on its skins for up to three weeks after alcoholic fermentation. Aged for 24 months in a selection of 15% new, second-fill, and third-fill French oak barrels, most sourced from the Vosges forests bordering Alsace. Lightly filtered before bottling in spring 2019; a harmless sediment may develop over time.
