Production Details 100% Riesling from Elgin. The grapes were hand-harvested on the morning of 21 February 2023 and transported to Devon Valley under refrigerated conditions prior to processing. Bunches were whole-bunch pressed, then the must was handled reductively with dry ice additions before tank fermentation with natural/endemic yeasts. Fermentation lasted 7 weeks and stopped naturally with about 10 g/L residual sugar.
