Production Details After the grapes were cooled down, 50% of the production was pressed as whole bunch clusters. In the same press, on top of the bunches, another 25% of the grapes were crushed. The resulting juice was naturally fermented in 300L and 500L neutral French oak barrels. The remaining 25% was destemmed, crushed and fermented on the skins until dry, with daily punch downs for concentrated skin extraction. The two portions were kept separate, matured for 10 months, then the bottled wine was stored for another 9 months prior to release.
