Production Details This single-vineyard Chenin came from the Langkloof area on the northern slopes of the Paardeberg and was Pilgrim's first and only vintage from this block. The grapes were destemmed and crushed, with about 80% naturally fermented in small neutral French oak barrels. The remaining 20% was split between a cool soak before pressing and skin fermentation until dry, then transferred to barrel. The barrels were blended after 8 months, followed by a total of 12 months in barrel and a further year in bottle prior to release.
