Production Details The 2023 release was produced exclusively from clone SH7C. The producer states that 30% whole-bunch fermentation was used and 20% of de-stemmed stalks were added back into the ferment. Fermentation took place in small open-top fermenters with regular punch-downs and managed oxygen exposure. After pressing, the wine matured for 24 months in neutral and third-fill French oak barrels.
