Production Details The vineyard is in the Simonsberg ward of Stellenbosch. The grapes are hand-harvested in the early morning and transported in small 20 lb boxes to minimize damage. At the cellar, selected yeast strains are used for fermentation at cool temperatures and the wine is lightly filtered after fermentation.
