Production Details Single old-vine, unirrigated bush vines in the Swartland flatlands on the Darling side of the Swartland. Sandy topsoil overlies Koffieklip subsoil at 100 meters above sea level. Grapes were picked at optimal ripeness, cooled overnight to 4C, whole-bunch pressed, then fermented spontaneously in amphora and older French oak barrels. The wine received one sulfur addition in deep winter, spent 10 months on the lees, then was blended and bottled.
