Production Details Grapes are sourced from the Ignis vineyard in the Hemel-en-Aarde Valley, from 20-year-old Sauvignon Blanc vines on low-vigour soils. Viticulture is uncertified organic. Winemaking is hands-off: basket pressed, fermented with natural yeasts mostly in neutral 228-litre French oak with a small part in tank, then rested on lees for 6 months. A quarter of the wine completes full malolactic fermentation and it is bottled without fining or filtration.
